Memorial Day Red White Blue (Printable)

Chilled white cake with red and blue gelatin pockets, topped with whipped cream and patriotic sprinkles.

# Ingredient List:

→ Cake

01 - 1 box (15.25 oz) white cake mix
02 - 1 cup water
03 - 1/2 cup vegetable oil
04 - 3 large eggs

→ Gelatin

05 - 1 box (3 oz) strawberry or cherry-flavored gelatin
06 - 1 box (3 oz) berry blue gelatin
07 - 2 cups boiling water, divided
08 - 2 cups cold water, divided

→ Topping

09 - 1 tub (8 oz) frozen whipped topping, thawed
10 - 2 tablespoons red, white, and blue sprinkles or nonpareils
11 - Fresh strawberries and blueberries, optional, to garnish

# Steps:

01 - Preheat the oven to 350°F. Grease a 9x13-inch baking dish with butter or nonstick spray and set aside.
02 - Combine the white cake mix, 1 cup water, 1/2 cup vegetable oil and 3 large eggs in a mixing bowl; beat with an electric mixer or whisk until smooth and homogenous according to the package directions.
03 - Transfer the batter to the prepared 9x13-inch dish and bake 28–32 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow to rest 15 minutes on a wire rack.
04 - Using the handle of a wooden spoon, poke holes about 1 inch apart across the surface of the warm cake to create cavities for the gelatin.
05 - In separate bowls dissolve each 3 oz gelatin in 1 cup boiling water; stir until fully dissolved, then stir in 1/2 cup cold water into each bowl.
06 - Carefully spoon the red gelatin into approximately half of the holes and the blue gelatin into the remaining holes, allowing the liquid to settle into the cavities. Refrigerate the cake at least 2 hours, or until the gelatin is completely set.
07 - Spread the thawed whipped topping evenly over the chilled cake. Scatter sprinkles across the surface and arrange fresh strawberries and blueberries if using. Keep refrigerated; slice and serve chilled.

# Tips from the Pros:

01 -
  • The way the gelatin seeps into the cake makes every slice a surprise—nobody gets two alike.
  • You can assemble it hours ahead, so you’re free to enjoy the party instead of hovering in the kitchen.
02 -
  • Pouring gelatin too quickly will seep out the sides—go slow and let it soak in each section before adding more.
  • It’s tempting to cut right in, but the longer you chill, the cleaner and brighter the layers appear when you serve.
03 -
  • Pop the finished cake into the fridge uncovered for the initial chill, then cover tightly once it’s fully cold to avoid sogginess.
  • If you like a sturdier topping, fold whipped topping with a bit of softened cream cheese before spreading—it holds up better outdoors.
